CELEBRITY CHEF AND COOKING AUTHORITY OF THE AMERICAN SOUTHWEST JANE BUTEL SHARES HER HOLIDAY BIZCOCHITOS
(Reading, PA – December 5, 2013) – Chef Jane Butel loves to cook at home on her BlueStar® pro appliance, and one of her signature dishes are Bizcochitos, spicy, anise-flavored cookies from New Mexico which are rich, crisp and very easy to make. They are actually the state cookie of New Mexico and one of Jane Butel’s holiday favorites.
Bizcochitos are a shortbread made preferably with lard and were first made to celebrate the Mexican Army’s victory over Napolean’s Army on May 5 – the first Cinco de Mayo! Stored in a tightly sealed container, they can be frozen up to six months.
A cooking professional, author, and teacher Ms. Butel chooses BlueStar cooking equipment for her home. “I have always had a love affair with the BlueStar burners – working as a consultant for Garland ranges since 1982 and owning several homes, cooking schools and my NYC restaurant. There is no better heat control – from a whisper to a full blown blast to pan sear or quickly boil!”
When preparing the Bizcochitos, Chef Butel says the “convection feature of the BlueStar oven creates just the right browning and moist texture.” The unique oven baffle design and convection fan system result in even heat distribution and precise, accurate baking, and the professional-grade oven is created to be large enough to fit a full size commercial baking sheet.
Credited with starting the Tex-Mex mania, Jan Butel published her first cookbook on New Mexican and American Mexican food in the 1960’s. Twenty cookbooks later, her latest cookbook, “Chili Madness” 2nd edition is a revised and greatly expanded version of her best-selling original “Chili Madness” cookbook.
Ms. Butel is listed in Who’s Who in American Women, Outstanding Young Women, Platinum Who’s Who and the World Who’s Who. She is a member of the New York City chapter of Les Dames d’Escoffier and the International Association of Culinary Professionals among other affiliations.
